RYAN CARRAGHER ROLLS INTO SOUTHWEST MICHIGAN FOOD SCENE WITH NOSH VILLAGE
On a cold, gray Saturday morning in January, he was conjuring up the flavors of the Pacific Rim surrounded by giant cloth bags of Nishiki rice; a long café oven perfect for fitting into tight spaces; a refrigerator filled with ingredients like Kewpie mayonnaise; a rice cooker; and large pots of spicy red curry and the sweeter Massaman curry – a beguiling concoction of sweet potatoes and chickpeas in a rich sauce.
It was an inauguration for the truck, which had been gutted and re-outfitted just in time for St. Joseph's Winter Beer Fest. Though the event had just started, and lines of people were still waiting to get in, a small crowd, craft brews in hand, were heading toward Nosh Village.
